Ingredients
- 3 cups organic spinach finely chopped
- 3/4 cup tomatoes finely chopped
- 1/2 cup green onion finely diced
- 1/2 cup cucumber finely chopped
- 1/2 cup cooked quinoa add more to taste
- 1 lemon squeezed
- 3 tbsp olive oil OR avocado oil
- salt/pepper
- 1/4 tsp allspice

- Just mix all the ingredients together, but go easy when adding salt because the fresh lemon juice already gives it a good flavor.
