Ingredients
  • 3 cups organic spinach finely chopped
  • 3/4 cup tomatoes finely chopped
  • 1/2 cup green onion finely diced
  • 1/2 cup cucumber finely chopped
  • 1/2 cup cooked quinoa add more to taste
  • 1 lemon squeezed
  • 3 tbsp olive oil OR avocado oil
  • salt/pepper
  • 1/4 tsp allspice

  1. Just mix all the ingredients together, but go easy when adding salt because the fresh lemon juice already gives it a good flavor.
