Ingredients
- 5 cups chopped organic spinach
- 1 cup chopped organic cilantro
- 1/2 cup chopped red onions or 3/4 cup chopped green onions
- 1 cup chopped organic red bell pepper (yellow & orange pepper work as well)
- 1/2 cup organic garbanzo beans
- 1 cup chopped organic cucumber
- 1/2 cup organic olives
- 3/4 cup cooked organic quinoa
- 1/2 cup crumbled feta cheese (optional)
- Juice of 1 lemon
- 2 Tbsp olive oil
- Salt and Black Pepper to taste
Combine all chopped ingredients in a bowl and mix in dressing as well as salt and black pepper to taste.
